Some wines should be decanted - poured from the bottle into the decanter to aerate. This process, which evaporates the acidity and bitterness from the liquid, allows the flavours and aromas to fully develop. Normally, it takes at least one hour to reach this state. But this decanter, designed by Peter Ørsig of Norm Architects, takes just 2 minutes to aerate the wine.
The aeration process itself is an unusual spectacle. You attach the carafe by the taper to the wine bottle and carefully turn it upside down. The liquid will then flow gracefully down the sides of the decanter. The wine can then be served straight from the decanter. However, if you want to enjoy the wine from its original bottle, you can repeat the process a second time and let the wine overflow back. During decanting, the wine's flavour develops as if it had spent many months in the bottle.
